Remove the heads and lay the kippers flat, skin side up, on the grid. Cook for about 3 min. each side, adding a dab of butter or margarine when they are turned over.
Serve alone or on a slice of toast. Anternatively, place a pair of kippers, flesh sides together, and grill under medium heat, first on one side then on the other; to serve, separate and top each with a nut of butter.
