  • ¾–1 lb. cold turkey
  • 1 small onion
  • 1 blade of mace</

Method

Cut turkey into neat pieces. Place some turkey bones, the sliced onion, mace and seasoning in a pan, cover with stock or water, simmer at least 1 hr. Melt butter in a saucepan, stir in flour, cook 3 min. without browning, stir in hot, strained stock. Simmer 10 min., season to taste, add nutmeg and pieces of turkey, allow to heat thoroughly—about 20 min. Mix cream or milk with egg yolk, s
