Cut turkey into neat pieces. Place some turkey bones, the sliced onion, mace and seasoning in a pan, cover with stock or water, simmer at least 1 hr. Melt butter in a saucepan, stir in flour, cook 3 min. without browning, stir in hot, strained stock.
