Gooseberry Jam—Green or Red


  • lb. gooseberries
  • ¾–1 pt. water
  • 3 lb. sugar


Pick or buy the gooseberries at the green stage, before they have ripened or turned colour. Top and tail and wash them, and put in a pan with the water. Simmer gently until the fruit is soft (this may take ½ hr. or longer). Then add the sugar and stir over a low heat until dissolved. Bring to the boil and boil rapidly until setting point is reached (remove from the heat after 10 min. rapid boiling to test for the set). Skim, pour into dry, warm jars and cover.
