Pick or buy the gooseberries at the green stage, before they have ripened or turned colour. Top and tail and wash them, and put in a pan with the water. Simmer gently until the fruit is soft (this may take ½ hr. or longer). Then add the sugar and stir over a low heat until dissolved.
