Method

Rinse and heat the ripe tomatoes in a covered pan till they are soft. Sieve through a hair or nylon sieve. To each quart of pulp add: ½ pt. water, 1 teasp. salt, 1 oz. sugar and a pinch of pepper. Reheat, fasten and process as for Tomato Purée above.
