Method

Cut into small pieces a variety of vegetables such as cauliflower, cucumber, shallots and young kidney beans, weighing about 2 lb. in all when prepared. Place in a large earthenware bowl and sprinkle with the cooking salt. Leave to stand for 24 hr. and then drain well. Boil the vinegar and chilli
