Barely cover the breadcrumbs with boiling milk and leave to stand for 10 min. Stir well. Add cheeses, butter, egg yolk and seasoning to taste. Beat until the mixture is quite smooth. Whisk the egg white to a stiff froth and fold it into the mixture. Pour into well-greased ramakin dishes and bake in a hot oven (425° F., Gas 7) until set.
