Method

Heat one cocotte (a special little dish manufactured for this purpose) for each person. Add a little butter or cream, break an egg into each, season to taste, and place the cocottes in a pan of boiling water to come half-way up their sides. Cover the pan and place in a moderate oven (350° F., Gas 4). Cooking time when the eggs are in thin china dishes will be 6–7 min.; allow 8–9 m
