Only one egg can be cooked at a time, but each takes less than one minute. Put a teacupful of oil into a small pan so that the egg will actually swim in the oil. Heat until the oil begins to smoke lightly, then maintain this temperature. Break the egg into a cup or saucer and season the yolk with salt and pepper. Slip it quickly into the oil, putting the edge of the cup to the surface of the oil. Dip a smooth wooden spoon into the hot oil, then pull the white over the yolk so as to cover it completely. Then turn the egg over in the oil and leave for a second only. It will then be done.
