  • 6 cutlets off a medium-sized barracouta
  • 1 oz. plain flour
  • salt and pepper
  • juice of


Wash and dry the fish and place the slices side by side in a fireproof dish. Mix the flour and seasonings together and sprinkle lemon juice over fish. Mix the butter and parsley and place in small pieces on the fish. Bake in a moderate oven (350° F., Gas 4) for 20 min., basting occasionally. Serve on a hot dish with the liquor strained over.
