Paua Roe Patties

Ingredients

  • 2–3 paua roes
  • ½ pt. white sauce
  • 12 pastry cases

Method

Carefully remove the roes from the muscle part of the fish. Simmer the roes very gently for about 10 min. in a little milk and water, strain and use the liquid for the white sauce. Cut the roes into small pieces and add them to the white sauce. Put 1 teasp. of the mixture into each pastry case, replace the tops of the cases, and heat the patties thoroughly in the oven.
