Like all batters, this mixture should rest for about half an hour before using. The water makes a lighter, lacier batter, but it is less rich.

Ingredients

  • 2 whole eggs, plus 2 extra yolks
  • 300 ml (10 fl oz) milk

Method

Combine the eggs, extra yolks, milk and 100ml ( fl oz) water in a bowl. Sift the flour and salt into another bowl, then beat in the egg and milk mixture and continue beating until a smooth batter is formed.
