Broad Beans with Pancetta

A traditional Tuscan approach to broad beans. The pancetta is best bought in a solid piece and most bacon is a somewhat inadequate alternative. If you can persuade your delicatessen to let you have the butt end of a Parma ham at a reasonable price, you will also have an excellent result. Best served on its own as a first course or light main course.
