There are limits to how much fish one wishes to fry in a pan, so this recipe serves two. If plaice is not to be found, lemon sole, megrim or flounder are good alternatives.
Fillet the plaice if the fishmonger cannot. Run a sharp knife down the middle of the backbone and around the neck. Slide the knife down either side of the spine, then along the bones so that you can simply lift the fillets off the frame. Trim the edges, cutting away the frill that runs along the outside edge of the fillets. Rinse briefly in cold water and pat dry with kitchen paper.
