Split the vanilla pod in half lengthways, put it in a saucepan with the milk and bring to the boil. Whisk the egg yolks with half the sugar in a stand mixer or with hand-held electric beaters until they are pale and have increased a little in volume. Add the flour and mix to a smooth paste.
