If cuttlefish is unavailable, squid can be used but cuttlefish is meatier and more appropriate. If starch is required, I would prefer some boiled potatoes to the rice advocated by M. Robuchon.

Method

In a large heavy saucepan, stew the onion and carrot gently in a couple of tablespoons of the olive oil for 10 minutes. Add the chopped fish bones and stew these briefly before adding the thyme, bay leaf, peppercorns and red wine. Add a little cold water, if necessary, to cover the bones.
