Green Pasta Dough

Method

Green pasta is made by adding pureed spinach to the above ingredients. Cook ½ pound of spinach in boiling water for 3 minutes. Drain, refresh under cold water, and squeeze as dry as possible. Puree the spinach and add to the eggs in the bowl. Be ready to incorporate more flour than usual when kneading the dough so that it will get the dry, glossy texture necessary for rolling it out.
