For the sauce, cut the Gorgonzola into cubes and soak in the milk for half an hour while you make the gnocchi.

Cook the potatoes until soft, and pass them through a food mill. Wash the spinach thoroughly and cook it in a very little water. Drain, carefully squeeze out all excess water, then chop finely. Add the spinach to the potatoes with the flour, beaten egg and seasonings, and mix well together. Shape and cook the gnocchi as in the basic recipe
