‘Because the calzone is a kind of “inside-out” pizza, it is able to keep intact all the flavours contained in the filling. This is a slightly heavier recipe than the other pizzas. It can also be made with a variety of different ingredients such as salami, cheese or vegetables.’

The calzone that my mother used to cook was based on fontina cheese, ham, sausages and eggs. The more classic calzone, however, contains mozzarella. You can make a vegetarian calzone by using ricotta cheese, spinach, egg and Parmesan, or any leftover or roasted vegetables.

Make the dough as described, and leave to rise.
