‘These stuffed pizzas are wonderful for parties and picnics as all the goodies are enclosed. Children love them. They are equally delicious hot or cold. If you make them to eat as a main course, serve with a tomato sauce.’

Method

Make the dough as described, and leave to rise for an hour.

Cut the pancetta or bacon into matchsticks and fry in 1 tbsp olive oil for a few minutes until golden and slightly crisp. Beat the ricotta together with the eggs, then add the fried pancetta or bacon, Parmesan and parsley. Stir the mixture well, then season with salt, pepper and nutmeg.
