‘This combination successfully contrasts the richness of the sweetbreads with the flavours of the lemon and capers. This remains one of the favourite recipes in my Neal Street restaurant. Not many butchers will automatically stock calf’s sweetbreads, but you should be able to order them, if you give the butcher good notice (and he is a good butcher!).’
