‘My mother was always good at making this recipe. I remember it was delicious in summer when the heat was intense and it wasn’t so necessary to eat large quantities of protein. This dish was nearly always served cold, but still crispy on the top, and accompanied by bread, even though the filling contained breadcrumbs. She used to prepare more than was needed.
