‘Small tender artichokes can now be found outside Italy, although I still think those in Italy are best. Importers are gradually coming to realise that we can do more in this country than boil large artichokes and serve them with melted butter or hollandaise. Which is just as well, as there are so many recipes in the Italian canon which use small artichokes.’
