‘This recipe enhances the ordinary frozen garden pea by cooking it in olive oil with onion and adding pink cooked ham. A very characteristic and complementary Italian combination, the dish can accompany both meat and fish.’

Ingredients

  • 300 g (10½ oz) fresh podded peas, or frozen
  • 3 tbsp olive oil

Method

Heat the olive oil in a medium saucepan and fry the onion for a few minutes. When it begins to colour, add the fresh peas, stir and cook for 5 minutes on a low heat (8-10 if frozen). Add the ham, salt and pepper, and stir over the heat for a minute or so, mixing well together.
