‘This inexpensive dish has a slightly bitter taste that doesn’t appeal to everyone. But, served with a good steak, especially a charcoal-grilled one, it is extraordinary. Try to buy tender turnip (or rape) shoots; only the tops are used, as the main part is tough. If you cannot find this vegetable, then various others could be prepared in the same way: broccoli or sprouting broccoli, cauliflower, spinach, Swiss chard or even French beans.
