‘Fennel is extraordinarily versatile. Not only can it be cooked as in this delicious dish to accompany both meat and fish, it can also be eaten raw after a meal as a digestif or raw in salads. Along with other vegetables, it can also be dipped into a bowl of extra virgin olive oil in Pinzimonio, or into Bagna Cauda. Choose round, fat, firm fennel bulbs.’
