‘Raw cultivated mushrooms make an excellent salad. However, using fresh ceps turns this sophisticated delicacy into perhaps the finest dish in the world. The ceps should be small and really fresh, and I urge you to try them despite their cost - they are incomparable. In Italy we use the Caesar’s mushrooms as well, but they are relatively rare elsewhere.’
