‘The imagination of the Neapolitans has gone so far as to put the mozzarella in a “carrozza” (carriage), one of the symbols of old Naples. It is a very easy, tasty recipe if cooked with a good stringy mozzarella and eaten right away. It can be served as a first or main course, along with a green salad.’

Ingredients

  • 8 slices thin white bread
  • 200 g (7 oz) fresh mozzarella

Method

Cut the crusts off the bread so that each slice measures 10 × 6cm (4 × 2½ in). Slice the mozzarella into 4 thick slices about 1cm (½ in) thick. Beat the eggs lightly and season with salt and pepper. Dip the slices of bread on one side into the milk and then place a slice of mozzarella on the dry side. Season the mozzarella with salt and pepper and make a sandwich with another slice of bread, mi
