‘Smoked mozzarella, with its brownish smoky-flavoured skin and firm texture, is delicious in salads. This recipe makes a tasty antipasto or snack.’
Slice the mozzarella into four thick slices. Dust each slice with flour, dip into the beaten egg and then coat with the bread-crumbs. Heat the butter in a heavy pan until it fizzes. Fry the mozzarella slices until crisp and brown on each side. It will take less than a minute to seal the coating. The cheese should hardly have melted or the slices will fall apart.
