‘Another very easily prepared recipe using cooked pears, which can be found in many Italian restaurants. My mother used to make it in autumn when pears are plentiful and when the first wine has just been pressed. She would always make more than was needed; apart from being a dessert, it was also something special for us when we returned ravenous from school. The alcohol in the wine disappears when cooked, so the pears can be given to children.’
