‘“Meliga” is the Piedmontese name for maize flour from which polenta is usually made. Maize flour is very common in Italy - and is becoming more familiar here now - and one way to use it is in the making of desserts. For this recipe you will need the instant or quickcook maize flour that can be found in any good Italian delicatessen. These biscuits are usually found in Carmagnola, near Turin, and also in the Aosta valley.’
