I love eating small red mullet, simply fried in olive oil until crisp. As these delicate fish are easily perishable, they are best eaten on the day they are caught, or at least within 24 hours. Very small red mullet don’t need to be gutted, but if your mullet are a little larger then I suggest you do so. Allow 3 or 4 fish per person if they are larger.
