Dorade or orate is the real name of the fish used in this recipe; small ones are called infanticelle (from infants). St. Nicolas is the patron saint of Bari and this is where the recipe originated. If you can’t find very small bream, buy 4 larger ones, about 300–400 g each, and put two in each parcel.

Ingredients

  • 8 small sea bream, 200 g each, gutted and cleaned
  • 2 lemons, sliced

Method

Heat the oven to 200°C/Gas 6. Tear off two large sheets of foil and place on baking trays. Rinse the sea bream and pat dry.

Lay a sliced lemon, overlapping, in the middle of each sheet foil, then arrange 4 fish on top. Season with salt and pepper, add a whole garlic clove to ea
