The calzone of Puglia is quite different from the more familiar calzone of Naples, which is essentially a folded pizza. The Puglian version looks more like a pie or giant pasty. I have made plenty of these pies, using the excellent red onions of Acquaviva delle Fonti, similar to those of Tropea. Also known as pizza di acqua viva, they are traditionally eaten to celebrate the feast days of the two saints, Dottori Cosimo and Damiano.
