The Sicilians have a penchant for including citrus fruit in savoury salads. This salad is made with those lemons that have a very thick skin rather like cedri (citrons), and these have less acidity than normal lemons. The use of blood oranges in season makes the dish very special, and it will accompany pork and veal roasts wonderfully.
