“There is no decent antipasto in northern Italy, especially in Piedmont which does not include a pickled element, something like gherkin, onion, mushrooms, olives or peppers in vinegar. Giardiniera is a mixture of garden vegetables pickled for this purpose. The intention is to balance other, more fatty items of the antipasto, but above all to tease the stomach juices for the dishes following.”
