“In almost every one of my books, there is a recipe by Nina Burgai, a good friend of mine, who used to run a little hotel around 6,000 feet up in the Valle d’Aosta. The food she produces is utterly delicious, but it can’t be called light as it is created mostly for energetic skiers in the winter and robust mountaineers in the summer. Very few dishes containing cabbage are refined, but the taste and flavour of this soup more than makes up for its lack of elegance.”
