“There are several versions of this curious Tuscan soup. It used to be a soup of the poor, made from just boiling water with some flavourings such as carrot a little garlic and some olive oil, which would have been poured onto a slice of stale toasted bread. Today this soup is enjoying a revival, and has obviously become a little more elaborate, but in principle it is still the same.”
