  • 4 pike steaks, about 200g each
  • olive oil
  • 2 garlic cloves, very finely chopped

Method

Trim the pike steaks. Pour enough olive oil to cover the steaks into a shallow pan just big enough to hold them. Bring the oil up to a simmering point, then add the garlic and parsley. Make sure that the oil is not too hot, then add the pike steaks. Cook over a low heat for 15 minutes, or until you see little white balls forming in the oil. This is the fish protein coagulating.
