“Probably the best-known radicchio dish is grilled radicchio, and this is my variation on it. Thanks to the popularity of this vegetable, which is often used in salads, we can also appreciate its culinary versatility, for a huge number of dishes in the last 20 years have been based on it.”

Ingredients

  • 4 whole radicchio from Treviso (firm to the touch), with a nice pointed root (this is also edible)
  • 8 tbsp extra virgin olive oil

Method

Preheat the grill to medium and the oven to 190°C/Gas 5.

Remove the old outer leaves from the radicchio, and trim the stems. Cut into two equal parts lengthways. (The radicchio should be at least 20cm long, including the root.) Brush the halves with olive oil, salt and pepper,
