“When my mother was short of ingredients and also of time (we were six children!) then pumpkin was a welcome food. It didn’t require a great deal of attention, but it fully satisfied our permanent hunger. At the time we loathed it – I wish I could have it now.”

Ingredients

  • 1 pumpkin, about 3kg (preferably Marina di Choggia)
  • 100 g butter
  • 2 garlic cloves,

Method

Preheat the oven to 200°C/Gas 6.

Cut the pumpkin in half and remove the seeds. Cut each half into 3 wedges. Bake the pumpkin wedges for 50-60 minutes<
