Crush two-thirds of the walnuts, leaving the rest whole.
Put the sugar in a pan with the water and heat gently until the sugar has dissolved. Continue to heat until the sugar syrup just turns golden.
Meanwhile, combine all the other ingredients, including the crushed and whole walnuts, in a bowl. Add the sugar syrup and mix well. Divide the mixture in two and spoon each portion
