Thaw phyllo dough in the refrigerator overnight and keep it covered until ready to use. Be sure to pace yourself when brushing with butter—it’s easy to go heavy in the beginning and then run out on the last couple of sheets. Store baklava in the refrigerator, but allow it to reach room temperature before eating.

Preheat oven to 350°F. Butter a 13x9-inch baking pan.

Melt 2 sticks butter in a saucepan over low heat. Keep warm. Process almonds, walnuts, pecans, cinnamon, nutmeg, and cloves in a food processor until very finely chopped. Add apples and sugar. Pulse until finely chopped. Set
