Original versions of mincemeat pies contained beef or beef suet. This modernized version skips the meat but adds a bit of butter instead. For a little spice, reduce the amount of golden raisins to ½ cup and add ½ cup minced crystallized ginger.
Peel, core, and coarsely chop apples. Combine apples, apricots, raisins, currants, ginger, orange zest, juice, and brown sugar in a large saucepan over medium heat. Bring mixture to a boil. Reduce heat to low and simmer, stirring occasionally, for 1 hour.
Stir in cinnamon, cloves, and allspice. Simmer 5 minutes. Stir in bourbon, butter, and walnuts. Cool completely.
