Try this rich and surprisingly filling soup at tailgate parties or any other fall get-together. You can vary the flavor a bit by substituting a smoked cheese. Pretzels pair well with these flavors, so sprinkle pieces of broken pretzels over the top as a fun, crunchy garnish.

Ingredients

  • 4 tablespoons butter
  • 1 onion, chopped
  • teaspoon crushed

Method

Melt butter in a soup pot over medium heat. Add onion and pepper flakes; cook, stirring occasionally, for 5 minutes. Meanwhile, peel, core, and chop apples.

Add apples and thyme. Cook, stirring frequently, for 5 minutes.
