There is a lot of satisfying crunch to this salad that is hearty enough to serve as a whole meal. Napa cabbage is much more tender and sweet than head cabbage. Remove the tough white ribs from the outer leaves if they are pithy, and slice all parts of the interior leaves for extra bite.
Prepare Apple-Soy Vinaigrette and place about 2 tablespoons in a medium bowl. Core and thinly slice apples; add to bowl and toss in vinaigrette to coat (this will help prevent the apples from browning).
