Marinate the pork at least 1 hour; for best flavor, combine the ingredients in the morning or the night before cooking. The Apple Salsa should be prepared closer to dinner so the flavor remains fresh. Because pork tenderloins often come two to a package, this marinade is generous enough for both.

Ingredients

  • ¾ cup frozen and thawed apple juice concentrate
  • ¼ cup soy sauce

Method

Combine apple juice concentrate, soy sauce, olive oil, mustard, and black pepper in a large zip-top plastic storage bag.

Trim excess fat and silver skin from tenderloins. Place pork in bag; seal and refrigerate 1 hour or up to 1 day. Turn bag occasionally.

Prepare grill or preheat oven to 375°F
