Though grilling the shrimp on a charcoal fire is the ideal way to prepare this dish, they can be cooked in a very hot, preheated cast-iron skillet.
Prepare a charcoal grill.
Wash and pat dry the prawns with paper towels. In a bowl, toss the shrimp with enough olive oil to coat, and add kosher salt and cracked pepper to taste. Set aside for 30 minutes.
In another bowl, toss the peppers with more olive oil and seasonings. Set aside for 30 minutes.
