Though the egg has taken a bad rap of late, egg dishes and omelettes are still popular for breakfast or brunch, even if enjoyed only on Sunday.

Ingredients

  • 3 Golden Delicious apples, peeled, cored and chopped
  • 2 tablespoons vanilla sugar or granulated sugar

Method

In a small saucepan, combine the apples and vanilla sugar. If using granulated sugar, add ⅛ teaspoon vanilla extract. Cover and cook over medium heat, shaking the pan from time to time so the apples do not stick. When the apples are soft, remove from the heat and whisk in the Calvados. Cover and set aside.
