Sweet and sour red cabbage can be made a day ahead and reheated. Serve it with duck, goose or pheasant.
In a kettle of lightly salted boiling water, blanch the cabbage for 1 minute. Drain and cool under running water. If using a combination of white and red cabbage, blanch separately. When cool, drain thoroughly and set aside.
