This is a spicy version of apple butter to be used as a relish with meats and chicken.
Peel, quarter and core the apples and reserve the skins and cores. Thinly slice the apples and place in a bowl of cold water and lemon juice. Set aside.
Place the skins, cores and 2 cups of water in a nonreactive saucepan and bring to a boil. Cover and simmer for 25 minutes, or until the skins are soft. Strain the liquid into a bowl, pressing down on the pulp to extract all the juices.
